  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • ½ cup melted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk or almond milk
  • 2 cups finely chopped apples preferably Granny Smith

For the Frosting

  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract optional

Instructions

Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, ground cinnamon, and salt until well combined.
  • In a separate bowl, cream the melted butter with both sugars until the mixture is light and fluffy.
  • Add the eggs one at a time to your butter-sugar mixture, along with the vanilla extract. Beat each addition until well incorporated.
  • Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Mix just until combined.
  • Gently fold in the finely chopped apples with a spatula.
  • Spoon the batter into your prepared muffin tins, filling each liner about two-thirds full.
  • Place your muffin tin in the preheated oven and bake for 18–20 minutes or until golden brown and a toothpick inserted comes out clean.
  • While the cupcakes cool, whip the softened cream cheese with powdered sugar until smooth and creamy.
  • Once the cupcakes are completely cool, generously frost each cupcake with your creamy mixture.

Notes

Ensure even apple distribution and avoid overmixing for tender cupcakes. Customize flavors by adding spices like nutmeg or ginger.
