  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper to create a spice blend.
  • Pat the chicken breasts dry and rub the spice blend over both sides of each breast.
  • Heat olive oil in a skillet over medium heat and sear the chicken breasts for about 3-4 minutes on each side.
  • Remove skillet from heat and pour salsa over the chicken breasts.
  • Spoon queso dip over the salsa-covered chicken breasts.
  • Sprinkle shredded cheddar cheese on top.
  • Transfer skillet to the oven and bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
  • Let the chicken rest for about 5 minutes before serving.
  • Garnish with chopped cilantro and optional jalapeños.
