For the Salmon

  • 2 fillets Salmon choose fresh salmon for the best flavor and tenderness

For the Bang Bang Sauce

  • ½ cup Mayonnaise creates creamy base

  • 1 tablespoon Rice vinegar adds acidity

For the Veggie Bowl

  • 2 cups Mixed greens fresh base
  • 1 cup Cherry tomatoes adds flavor and color
  • 1 cup Cucumber adds crunch
  • 1 avocado Avocado provides creaminess

Instructions

Cooking Steps

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Season the salmon fillets with salt, black pepper, and optional red pepper flakes. Bake for 12-15 minutes until flakes easily and is golden.
  • While the salmon bakes, whisk together mayonnaise, Sriracha, honey, and rice vinegar in a bowl until smooth. Adjust spice level if desired.
  • Once the salmon is cooked, start assembling the bowls with mixed greens as the base. Slice cherry tomatoes, cucumber, and avocado and arrange on top.
  • Flake the baked salmon into bite-sized pieces and place on the veggies. Drizzle with the bang bang sauce.
  • Serve while warm, possibly garnished with sesame seeds or cilantro.
