  • 2 tablespoons olive oil for sautéing
  • 1 pound breakfast sausage Italian or any preferred flavor
  • 1 medium onion finely chopped
  • 2 cups butternut squash peeled and diced
  • 2 medium apples sweet, peeled and diced
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup fresh parsley chopped

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the breakfast sausage, breaking it apart as it cooks. Sauté for about 5 to 7 minutes until browned. Remove and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the chopped onion. Cook for about 3 minutes until softened.
  • Stir in the diced butternut squash, coating it with the onion. Cook for about 10 minutes, stirring occasionally until it softens.
  • Add the diced apples to the skillet, cooking for another 5 minutes until both the squash and apples are tender.
  • Sprinkle the ground cinnamon, nutmeg, salt, and pepper over the mixture. Stir thoroughly to combine and cook for about 1 minute.
  • Return the cooked sausage to the skillet, mixing it with the squash and apple medley. Cook for an additional 2 to 3 minutes.
  • Remove from heat and sprinkle the fresh parsley on top. Serve immediately.

Notes

Use fresh butternut squash and apples for the best flavor. Adjust spices according to your preference. Consider topping with sour cream or feta cheese.
