Step-by-Step Instructions for Butternut Squash Apple Bake
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine 2 cups of diced butternut squash with 2 medium sliced apples.
Sprinkle ¼ cup of brown sugar, 1 teaspoon of ground cinnamon, ¼ teaspoon of ground nutmeg, and ¼ teaspoon of salt over the fruit mixture.
Drizzle 1 tablespoon of lemon juice over the mixture and carefully toss everything together.
Grease a 9x13 inch baking dish and pour the mixture into the dish.
In a small bowl, mix together ¼ cup melted unsalted butter with 1 cup of granola or oats.
Evenly distribute the granola mixture over the top of the squash and apple layer.
Cover the dish tightly with aluminum foil and bake for 25 minutes.
After 25 minutes, uncover and continue baking for an additional 15-20 minutes until the topping is golden brown.
Allow to cool slightly before serving warm.
Notes
Choose firm and slightly tart apples to balance sweetness. Cut your squash into uniform pieces for even cooking.
