Instructions
Step-by-Step Instructions
In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, combine the wet ingredients: milk, eggs, vanilla extract, and melted butter.
Pour the wet ingredients into the dry mixture and stir gently until just combined.
Heat oil in a deep fryer to 350°F. Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes until golden brown.
In a saucepan, heat heavy cream and vanilla extract until simmering. In a bowl, whisk egg yolks and brown sugar until smooth.
Gradually mix the warm cream into the egg yolks while whisking continuously.
Return the mixture to the saucepan and cook over low heat until thickened, about 5-7 minutes.
Remove from heat and let the custard cool to room temperature.
Fill a piping bag with custard and fill each cured donut generously.
Spread granulated sugar on a heatproof surface and melt using a kitchen torch until caramelized.
Serve warm or cool, pairing with coffee or your favorite beverage.
