  • 225 g bow tie pasta
  • 1 tablespoon olive oil for sautéing sausage
  • 340 g cooked smoked sausage cajun, andouille, or regular smoked sausage
  • 5 cloves garlic minced
  • 2 tablespoons butter
  • salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • fresh thyme leaves

Instructions

Step-by-Step Instructions

  • Preheat your oven to 200°C (400°F). Toss the cubed butternut squash in a mixing bowl with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.
  • Prepare Brussels sprouts by trimming and halving them, then tossing with 2 tablespoons of olive oil, salt, and pepper. Roast on a separate baking sheet for 20-30 minutes until crispy.
  • In a large pot, boil salted water and add 225 g of bow tie pasta, cooking until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  • In a skillet, heat 1 tablespoon of olive oil and sauté sliced cooked smoked sausage for 5-7 minutes until golden brown, then remove and set aside.
  • Sauté minced garlic in the skillet until fragrant, then add 2 tablespoons of butter and melt. Toss in the cooked pasta, seasoning with salt, pepper, and smoked paprika.
  • Combine roasted squash, Brussels sprouts, and sautéed sausage with the pasta. Add fresh thyme leaves, mixing everything gently and adjusting seasoning as needed.
