Heat 2 tablespoons of olive oil in a large pot over medium heat. Add one diced yellow onion and 3 minced garlic cloves, sautéing for about 5 minutes until they become translucent and fragrant.
Stir in 2 diced carrots and 1 cup of rinsed lentils, continuing to sauté for another 3 minutes.
Carefully add 4 cups of vegetable broth, along with 1 teaspoon of cumin powder, and season with salt and pepper to your liking. Bring the mixture to a boil over high heat, then reduce the heat to low.
Allow it to simmer uncovered for 30 minutes, stirring occasionally until the lentils are tender and the stew thickens slightly.
Add 4 cups of chopped kale to the pot during the last 5 minutes of simmering. Stir gently until the kale wilts down and brightens in color.
Take a moment to taste your lentil and kale stew, adjusting the seasoning as needed before serving.
