Instructions
Step-by-Step Instructions
Heat the oil in a medium cooking pot over medium heat for about 2 minutes until shimmering.
Sauté ½ medium chopped onion, 2 diced celery sticks, and 2 diced carrots for 5–7 minutes until soft.
Add 3 minced cloves of garlic and cook for an additional minute, being careful not to brown.
Sprinkle 1 tablespoon of all-purpose flour over the mixture and stir well, cooking for 1–2 minutes.
Gradually pour in 5 cups of chicken stock while stirring, then bring to a simmer.
Add ½ teaspoon of Italian seasoning, ½ teaspoon of salt, and ¼ teaspoon of black pepper; simmer for about 5 minutes.
Stir in 1 ½ cups of shredded cooked turkey and ½ cup of uncooked orzo; cook for about 10 minutes.
Stir in ¼ cup of heavy cream and 1 cup of baby spinach; cook for an additional 2–3 minutes.
Taste and adjust seasoning before serving hot.
Notes
Store leftovers in an airtight container for up to 3 days. Freezing is possible for up to 3 months.
