Heat a large pot over medium heat and add olive oil. Sauté chopped onion and minced garlic for about 5 minutes until translucent.
Stir in diced green bell pepper and chopped zucchini, cooking for 3-4 minutes until softened.
Add 2 cups of drained white chickpeas and 4 cups of vegetable broth. Bring to a gentle boil, then reduce to simmer for 10 minutes.
