Instructions

Step‑by‑Step Instructions

  • Heat a large pot over medium heat and add olive oil. Sauté chopped onion and minced garlic for about 5 minutes until translucent.
  • Stir in diced green bell pepper and chopped zucchini, cooking for 3-4 minutes until softened.
  • Add 2 cups of drained white chickpeas and 4 cups of vegetable broth. Bring to a gentle boil, then reduce to simmer for 10 minutes.
  • Sprinkle in cumin, chili powder, and oregano, stirring vigorously. Allow to simmer for another 5 minutes.
  • Remove from heat and ladle the chili into serving bowls. Garnish with cilantro, avocado slices, and lime juice.
