Instructions
Steps
In a large bowl, combine ground beef, egg, bread crumbs, parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form the mixture into small meatballs, about 1 inch in diameter.
In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
Pour in the chicken broth and add diced tomatoes. Bring to a simmer.
Carefully add the meatballs to the pot and cook for about 10 minutes.
Add tortellini and cook according to package instructions, usually about 3-5 minutes.
Stir in fresh spinach and cook until wilted, about 1-2 minutes.
Season with italian seasoning, salt, and pepper. Serve hot.
