Ingredients

For the Meatballs

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 large egg Acts as a binder for the meatballs.
  • ¼ cup bread crumbs
  • ¼ cup parmesan cheese Grated.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Soup Base

  • 2 tablespoons olive oil For sautéing.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 4 cups chicken broth Or vegetable broth.
  • 1 can diced tomatoes 14.5 oz can.
  • 1 cup tortellini Fresh or frozen.
  • 2 cups spinach Fresh.
  • 1 teaspoon italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Steps

  • In a large bowl, combine ground beef, egg, bread crumbs, parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Form the mixture into small meatballs, about 1 inch in diameter.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  • Pour in the chicken broth and add diced tomatoes. Bring to a simmer.
  • Carefully add the meatballs to the pot and cook for about 10 minutes.
  • Add tortellini and cook according to package instructions, usually about 3-5 minutes.
  • Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  • Season with italian seasoning, salt, and pepper. Serve hot.
