Equipment

  • deep frying pan
  • Mixing bowl
  • Slotted spoon
  • Kitchen thermometer

Ingredients

For the Filling

  • 1 cup fresh crab meat Use the freshest crab possible for that sweet, delicate flavor!
  • ¼ cup breadcrumbs These add texture to your filling; panko can give an extra crunch.
  • 2 large egg yolks They help bind the mixture together, ensuring your filling holds its shape.
  • 1 tablespoon mayonnaise Adds creaminess and enhances the overall flavor of the crab cake.
  • 1 tablespoon Dijon mustard Just a tablespoon gives a nice tang that complements the crab beautifully.
  • ¼ cup green onions, chopped These add a fresh, crisp element to your egg rolls.
  • 1 teaspoon paprika A dash of paprika not only adds color but also a subtle warmth.
  • ½ teaspoon garlic powder For a hint of garlic that doesn’t overpower the crab.
  • ¼ teaspoon black pepper Enhances the flavors; adjust to your spice preference.

For the Wrapping

  • 10 pieces egg roll wrappers Thinner than traditional dumpling wrappers, they fry up perfectly crispy.

For Frying

  • 2 cups cooking oil Choose an oil with a high smoking point, like canola or peanut, for frying.

Instructions

Preparation Steps

  • In a large mixing bowl, combine fresh crab meat, breadcrumbs, egg yolks, mayonnaise, and Dijon mustard. Add in the chopped green onions, paprika, garlic powder, and black pepper. Mix gently until well incorporated, ensuring the crab remains somewhat chunky.
  • Lay an egg roll wrapper flat on a clean surface. Scoop about 2 tablespoons of the crab mixture into the center. Fold the bottom corner over the filling, then fold in the side corners, and roll tightly, sealing the edge with water.
  • In a deep frying pan, pour cooking oil until about 2 inches deep. Heat the oil over medium-high heat until it reaches 350°F.
  • Carefully place the assembled egg rolls into the hot oil in batches, frying for about 3-4 minutes on each side until golden brown.
  • Remove the fried egg rolls with a slotted spoon and drain on paper towels. Serve warm with dipping sauces.

Notes

Always use fresh crab meat for the best flavor. Monitor oil temperature closely for crispiness and avoid overcrowding the frying pan.
