Ingredients

For the Pasta

  • 8 ounces Chickpea or high-protein pasta

For the Sauce

  • 1 tablespoon Olive oil for sautéing
  • 1 medium Onion finely diced
  • 1 medium Green bell pepper finely diced
  • 1 pound Lean ground beef or ground turkey
  • 3 cloves Garlic cloves crushed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Ground black pepper to taste
  • 2 tablespoons Tomato paste
  • 1 cup Tomato sauce or passata
  • ½ cup Light cream cheese or Greek yogurt
  • ½ cup Light sour cream
  • ¼ cup Fresh basil leaves lightly torn

Instructions

Cooking Steps

  • Boil a large pot of salted water over high heat, add the pasta, and cook for 8-10 minutes until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add onion and green bell pepper; sauté for about 5 minutes until tender.
  • Add ground beef to the skillet, breaking it apart. Cook for 5-7 minutes until browned, stirring occasionally. Mix in garlic, oregano, paprika, salt, and pepper.
  • Stir in tomato paste and tomato sauce. Reduce heat to low and simmer for 5 minutes until thickened and aromatic.
  • Mix in cream cheese and sour cream until smooth and creamy.
  • Add drained pasta to the skillet and toss to coat. Cook for an additional 2-3 minutes to heat through.
  • Serve garnished with fresh basil leaves.

Notes

Best served warm and can be adjusted for creaminess based on personal preference.
