Ingredients

For the Potatoes

  • 3 pounds Yukon Gold potatoes thinly sliced
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

For the Cheese Sauce

  • 1 cup Sharp cheddar cheese shredded
  • 1 cup Gruyère cheese shredded
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk whole milk preferred

For the Topping

  • ½ cup Breadcrumbs

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a medium-sized saucepan over medium heat, melt the butter until it bubbles gently. Stir in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk, continuing to stir until thickened, about 4-5 minutes. Remove from heat.
  • Stir in the sharp cheddar and Gruyère cheese into the thickened sauce until melted and smooth. Season with salt and pepper to taste.
  • In a greased baking dish, arrange half of the sliced potatoes in an even layer. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and cheese sauce.
  • Sprinkle breadcrumbs over the final layer of cheese sauce.
  • Cover with aluminum foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, until the top is golden brown and bubbly.
  • Let it rest for 10 minutes before serving. Optionally, garnish with freshly chopped chives.

Notes

For best results, use freshly shredded cheese and avoid waxy potato varieties.
