Instructions

Cooking Steps

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the diced chicken with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes until browned and cooked through. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for 30 seconds. Toss in fresh spinach and cook until wilted, about 2-3 minutes. Remove and set aside with the chicken.
  • Melt butter in the skillet over medium heat. Whisk in flour and cook for 1 minute. Gradually add chicken broth and heavy cream, stirring until well combined. Allow to simmer for 4-5 minutes until thickened.
  • Stir in grated parmesan cheese until melted. Gently add gnocchi to the sauce, ensuring they are well coated.
  • Fold in cooked chicken and spinach back into the skillet with the gnocchi and sauce. Stir gently until well incorporated and heated through.
  • Transfer to serving plates and garnish with fresh parsley. Serve warm and enjoy!
