Ingredients

  • 16 oz gnocchi pillowy dumplings

For the Chicken

  • 1 lb chicken breast chopped into bite-sized pieces
  • 1 teaspoon oil for sautéing

Cooking Instructions

  • Bring a large pot of salted water to a rolling boil. Add gnocchi and cook according to package instructions, about 2-3 minutes, until they float to the surface. Drain and set aside.
  • In a large skillet, heat oil over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown and cooked through. Stir occasionally.
  • Lower heat to medium, add cream cheese and chicken broth to the skillet. Stir gently to melt cream cheese and create a creamy sauce, about 2-3 minutes.
  • Fold in cooked gnocchi and spinach. Cover and simmer for 5-7 minutes, stirring occasionally, until spinach wilts.
  • Sprinkle cheddar cheese and bacon bits over the mixture. Stir to combine until cheese melts, about 1-2 minutes.
  • Remove from heat and serve immediately, garnishing with additional cheese or herbs if desired.

For best results, reheat leftovers gently with a splash of broth to maintain creaminess.
