  • 75 g red bell pepper

  • 75 g yellow bell pepper

For the Creamy Base

  • 140 g light cream cheese
  • 50 g shredded mozzarella can use low-fat
  • 3-4 light cheese slices use favorite melting cheese

For the Pasta

  • 240 g dry macaroni can use whole wheat or chickpea pasta
  • 125 ml reserved pasta water key for sauce binding

For Garnishing

  • fresh parsley for topping

Step-by-Step Instructions

  • Begin by boiling a large pot of salted water. Add the dry macaroni and cook until al dente, about 8–10 minutes.
  • In a large skillet, melt the butter over medium heat. Add minced garlic, chopped white onion, and vibrant bell peppers. Sauté for about 4–5 minutes until softened.
  • Crumble in the lean ground beef once the veggies are tender. Cook for 5–7 minutes, breaking it up to brown evenly. Drain excess fat if necessary. Season with salt, pepper, paprika, and chili flakes to taste.
  • Reduce the skillet heat to low and stir in the light cream cheese, shredded mozzarella, and cheese slices. Allow these to melt and combine into a creamy sauce.
  • Add the cooked macaroni and reserved pasta water to the skillet, stirring continuously until every noodle is coated with the sauce. Adjust sauce consistency as needed with more reserved pasta water.
  • Remove from heat, serve into bowls, and garnish with freshly chopped parsley. Enjoy!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat on the stovetop or microwave, adding reserved pasta water for creaminess.
