Instructions
Preparation Steps
Preheat your oven to 400°F (200°C).
Cut the butternut squash in half lengthwise and scoop out the seeds. Place cut-side up on a baking sheet.
Peel garlic and scatter on the baking sheet. Drizzle olive oil over both the squash and garlic.
Sprinkle with salt and black pepper. Roast in the oven for 35-40 minutes until tender.
Let cool for 5 minutes, then scoop out the squash flesh into a bowl.
Add roasted garlic, nutmeg, olive oil, almond milk, and butter to the bowl; mix well.
Mash the mixture until smooth. Adjust seasoning with salt and pepper if needed.
Transfer to serving dish and garnish with fresh herbs. Serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For long-term storage, freeze in safe containers for up to 3 months.
