Ingredients

For the Squash

  • 1 medium butternut squash cut in half and seeds removed
  • 5-6 cloves garlic peeled

For Seasoning

  • 1 tablespoon olive oil for roasting
  • to taste salt adjust according to taste
  • to taste black pepper or white pepper for milder flavor
  • ¼ teaspoon ground nutmeg

For Creaminess

  • ¼ cup almond milk or any milk of choice
  • 2 tablespoons butter or vegan alternative optional but recommended

For Garnish

  • to taste fresh parsley or chives for garnishing

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Cut the butternut squash in half lengthwise and scoop out the seeds. Place cut-side up on a baking sheet.
  • Peel garlic and scatter on the baking sheet. Drizzle olive oil over both the squash and garlic.
  • Sprinkle with salt and black pepper. Roast in the oven for 35-40 minutes until tender.
  • Let cool for 5 minutes, then scoop out the squash flesh into a bowl.
  • Add roasted garlic, nutmeg, olive oil, almond milk, and butter to the bowl; mix well.
  • Mash the mixture until smooth. Adjust seasoning with salt and pepper if needed.
  • Transfer to serving dish and garnish with fresh herbs. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For long-term storage, freeze in safe containers for up to 3 months.
