  • Bring a large pot of salted water to a rolling boil. Add spaghetti and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain.
  • In a large skillet, heat olive oil over medium heat. Add chopped sun-dried tomatoes and sauté for 2 minutes.
  • Add minced garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  • Reduce heat to low, pour in half-and-half or heavy cream, stirring well. Simmer for 3-4 minutes until thickened. Season with salt and black pepper.
  • Toss in fresh baby spinach, stirring until wilted, about 2-3 minutes.
  • Stir in grated Parmesan cheese, allowing it to melt. Add reserved pasta water if the sauce thickens too much.
  • Add the drained spaghetti to the skillet, tossing gently to coat evenly with the sauce.
