Step-by-Step Instructions

  • In a large pot, bring salted water to a rapid boil over high heat. Add 8 oz of your favorite pasta, stirring occasionally, and cook until al dente, about 8–10 minutes. Once done, reserve ½ cup of the starchy pasta water and drain the rest. Set cooked pasta aside.
  • In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Once hot, add 8 oz of sliced mushrooms, sauté for about 6–7 minutes until golden brown and tender.
  • Stir in 3 cloves of minced garlic, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Let garlic become fragrant, about 1 minute, then add 3–4 cups of fresh spinach. Toss and cook for 2–3 minutes until spinach wilts.
  • Pour in ½ cup of heavy cream, stirring to combine. Add ¼ cup of grated Parmesan cheese and simmer for 2–3 minutes on low heat, allowing the sauce to thicken.
  • Add the cooked pasta to the skillet, tossing gently to coat in the sauce. If too thick, gradually add reserved pasta water until desired consistency is achieved.
  • Plate the creamy Spinach Mushroom Pasta and sprinkle extra Parmesan on top. Serve warm.
