Step-by-Step Instructions

  • In a large skillet, heat olive oil over medium-high heat. Add shrimp, seasoned with paprika, salt, and pepper. Cook until pink, about 2-3 minutes per side. Remove and set aside.
  • In the same skillet, lower heat and add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until garlic is fragrant.
  • Pour in heavy cream and stir until simmering, about 2 minutes.
  • Add Parmesan cheese, stirring until melted and smooth.
  • Incorporate spinach, cooking for about 2 minutes until wilted.
  • Return shrimp to the skillet, toss to coat in the sauce for 1 minute.
  • Cook pasta according to package instructions. Drain, reserving some pasta water.
  • Add pasta to skillet with shrimp and sauce. Toss to combine, adding reserved pasta water as needed.

Notes

Best served immediately, and can be storage in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
