Spread

  • 0.5 cup Feta cheese, crumbled adds richness

Sandwiches

  • 2 pieces English cucumbers sliced thinly
  • 4 slices Whole-grain bread sturdy bread
  • Salt
  • Pepper

Instructions

Preparation

  • Wash the cucumbers thoroughly and slice them thinly, around ⅛-inch thick, then let them dry on a paper towel.
  • In a bowl, combine Greek yogurt, crumbled feta cheese, and fresh herbs, mixing until creamy. Season with salt and pepper.
  • Spread the yogurt-feta mixture on one side of each slice of bread.
  • Layer the sliced cucumbers evenly on two of the bread slices that have the spread.
  • Place the remaining bread slices on top, spread-side down, and press gently to secure. Optionally slice in half diagonally.
  • Serve immediately on a platter, garnished with extra herbs if desired.
