Ingredients

For the Chicken

For the Coating

  • 1 cup Grated Parmesan cheese Freshly grated gives the best flavor.
  • 1 cup Panko breadcrumbs Regular breadcrumbs can work, but will be less crispy.
  • 1 teaspoon Garlic powder Fresh minced garlic can also be used.
  • 1 teaspoon Salt Adjust to your preference.
  • ½ teaspoon Black pepper Freshly ground will elevate the taste.

For the Garlic Sauce

  • 4 tablespoons Olive oil Can mix in butter for richer flavor.
  • 4 cloves Minced garlic Fresh garlic adds aroma and taste.
  • 1 cup Chicken broth Low-sodium broth is preferred.
  • ½ cup Heavy cream Substitute with coconut cream for dairy-free.
  • 2 tablespoons Fresh parsley Adds freshness and color.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Pound the chicken breasts to an even thickness of about ½ inch.
  • Set up your breading station with flour, egg mixture, and breadcrumb mixture.
  • Dredge each chicken breast in flour, dip in egg, then coat with breadcrumbs.

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Cook the coated chicken for about 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 15-20 minutes until cooked through.

Garlic Sauce

  • In a saucepan, heat the remaining olive oil and sauté minced garlic until fragrant.
  • Stir in chicken broth and let it simmer for a few minutes.
  • Reduce heat, stir in heavy cream, and simmer until sauce thickens.

Serving

  • Pour the garlic sauce over the baked chicken and garnish with parsley.
