For the Carrots

  • 1 lb Carrots peeled and cut into thick rounds
  • Salt to taste
  • Black Pepper to taste

  • 1 tablespoon Olive Oil
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Smoked Paprika
  • 2 tablespoon Parmesan Cheese grated, optional

Preparation Steps

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Bring a large pot of salted water to a boil. Add the thick rounds of peeled carrots and cook for 10–12 minutes until fork-tender.
  • Drain the carrots and let them cool slightly. Smash each carrot round with the bottom of a glass or measuring cup.
  • Drizzle the smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese on top.
  • Roast the carrots in the preheated oven for 20–25 minutes, flipping halfway through for even browning.
  • Sprinkle freshly chopped parsley over the carrots and serve hot.
