Preparation Steps
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Bring a large pot of salted water to a boil. Add the thick rounds of peeled carrots and cook for 10–12 minutes until fork-tender.
Drain the carrots and let them cool slightly. Smash each carrot round with the bottom of a glass or measuring cup.
Drizzle the smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese on top.
Roast the carrots in the preheated oven for 20–25 minutes, flipping halfway through for even browning.
Sprinkle freshly chopped parsley over the carrots and serve hot.

Ensure that carrots are fork-tender before smashing, and serve immediately for the best texture.
