Ingredients

  • 2 cups cooked chicken, shredded
  • 15 oz black beans rinsed
  • 1 cup corn
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 each jalapeño, diced optional

Seasoning

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and pepper

Assembly

  • 10–12 each flour tortillas
  • oil for frying or cooking spray for a healthier bake

Preparation Steps

  • In a large bowl, combine the filling ingredients until well mixed.
  • Warm tortillas in a skillet for about 10–15 seconds on each side.
  • Lay a tortilla flat, place about 2 tablespoons of filling in the center, fold, and roll tightly.
  • Heat oil in a frying pan until shimmering or preheat oven to 425°F for baking.
  • Fry egg rolls in hot oil for about 3–4 minutes on each side or bake until golden brown.
  • Drain excess oil on paper towels and allow to cool slightly before serving.
  • Serve warm with your favorite dips like salsa or guacamole.

Notes

Leftover egg rolls can be stored in the fridge for 3-4 days or frozen for longer storage. Reheat directly from frozen.
