Equipment

  • Crock Pot

Ingredients

For the Stew Base

  • 1 pound ground beef adds rich flavor and protein; use turkey for a lighter option.
  • 1 medium onion, chopped enhances depth and aroma; choose a sweet onion for a milder taste.
  • 2 cloves garlic, minced infuses savory goodness; feel free to add more for extra punch.

For the Vegetables

  • 4 medium potatoes, peeled and diced provides heartiness; try using sweet potatoes for a sweet twist.
  • 2 medium carrots, sliced brings natural sweetness and color; substitute with parsnips for a unique flavor.
  • 1 cup green beans, cut into 1-inch pieces adds crunch and freshness; frozen green beans work well too.

For the Canned Additions

  • 1 can (15 ounces) kidney beans, drained and rinsed packs protein and fiber; black beans can be used instead.
  • 1 can (15 ounces) diced tomatoes (with juice) contributes acidity and moisture; crushed tomatoes will yield a thicker stew.

For the Broth and Seasonings

  • 1 cup beef broth provides a robust base; vegetable broth is a great substitute for a meat-free version.
  • 1 teaspoon Worcestershire sauce adds umami flavor; soy sauce can serve as an alternative.
  • 1 teaspoon salt balances the flavors; adjust to taste based on dietary needs.
  • ½ teaspoon black pepper adds a hint of heat; feel free to spice it up with cayenne pepper.
  • 1 teaspoon dried thyme gives an aromatic touch; fresh thyme works beautifully if you have it.
  • 1 teaspoon dried oregano rounds out the flavors; Italian seasoning can replace it in a pinch.
  • 1 leaf bay leaf enhances complexity; remove before serving for the best flavor.

Instructions

Step-by-Step Instructions

  • In a skillet over medium heat, add the pound of ground beef along with the chopped onion and minced garlic. Cook for about 5–7 minutes, stirring occasionally until the beef is no longer pink and the onions have turned translucent. Drain any excess fat.
  • Layer the diced potatoes evenly at the bottom of your clean crock pot.
  • Add the sliced carrots on top of the potatoes, spreading them out to create an even layer.
  • Distribute the green beans over the carrots, forming a layer of freshness.
  • Gently spoon the browned beef mixture on top of the vegetables.
  • Pour the can of diced tomatoes, including the juice, over the beef and veggies.
  • Gently add the drained kidney beans evenly throughout the mixture.
  • In a separate bowl, combine the cup of beef broth, Worcestershire sauce, salt, black pepper, thyme, oregano, and bay leaf. Stir well.
  • Carefully pour the seasoned broth mixture evenly over the ingredients in the crock pot.
  • Cover the crock pot with the lid and set it to cook on low for 6–8 hours or on high for 3–4 hours.
  • Once cooking is complete, gently remove the bay leaf before serving.

Notes

This stew often tastes even better the next day as the flavors meld.
