  • Arrange the peach wedges in the pan, sprinkling with ¼ teaspoon of cinnamon.
  • Combine ¼ cup of water and ½ cup of sugar in a saucepan, cook undisturbed for about 10-15 minutes until light brown caramel. Add 1 tablespoon of bourbon and pour over peaches.
  • Cream together 8 tablespoons of butter and ¾ cup of sugar until fluffy. Gradually add eggs, then mix in vanilla and 2 tablespoons of bourbon.
  • Whisk together all-purpose flour, almond flour, baking powder, and remaining ¼ teaspoon of cinnamon. Fold into the butter mixture.
  • Pour batter over arranged peaches and smooth the top. Bake for 30-35 minutes until a toothpick comes out clean.
