  • In a large bowl, toss the diced butternut squash with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  • In a skillet, heat olive oil over medium heat. Add sliced onions and cook for about 20 minutes until golden brown.
  • Roll out the puff pastry on a floured surface and prick the bottom with a fork.
  • Spread caramelized onions over the pastry, then add roasted butternut squash, crumbled goat cheese, drizzle with heavy cream, and sprinkle with thyme.
  • Bake the assembled tart for 25-30 minutes until golden brown and bubbly.
  • Allow the tart to cool for about 10 minutes before serving.

Notes

Allowing the tart to cool for a bit helps maintain its shape when slicing.
