Step-by-Step Instructions for Chocolate Spiderweb Cheesecake
Crush the digestive biscuits into fine crumbs and mix with melted butter and cocoa powder. Press into a springform tin and refrigerate for 30 minutes.
Combine cream cheese, icing sugar, and cocoa powder in a mixer and whisk until smooth.
Add double cream to the cream cheese mixture and whisk until thick and holds its shape.
Pour the cheesecake filling over the crust, smooth the top, cover, and refrigerate overnight or for at least 4 hours.
For dark ganache, melt dark chocolate and double cream together in the microwave, stirring until silky.
Spread the dark ganache over the chilled cheesecake.
Melt white chocolate and double cream for the white ganache, mix in superwhite powder if using.
Pipe a spiral of white chocolate ganache on top, then draw lines with a skewer to create a spiderweb effect.
Slice and serve, storing leftovers covered in the fridge for up to 3 days.
