Step-by-Step Instructions for Chocolate Spiderweb Cheesecake

  • Crush the digestive biscuits into fine crumbs and mix with melted butter and cocoa powder. Press into a springform tin and refrigerate for 30 minutes.
  • Combine cream cheese, icing sugar, and cocoa powder in a mixer and whisk until smooth.
  • Add double cream to the cream cheese mixture and whisk until thick and holds its shape.
  • Pour the cheesecake filling over the crust, smooth the top, cover, and refrigerate overnight or for at least 4 hours.
  • For dark ganache, melt dark chocolate and double cream together in the microwave, stirring until silky.
  • Spread the dark ganache over the chilled cheesecake.
  • Melt white chocolate and double cream for the white ganache, mix in superwhite powder if using.
  • Pipe a spiral of white chocolate ganache on top, then draw lines with a skewer to create a spiderweb effect.
  • Slice and serve, storing leftovers covered in the fridge for up to 3 days.

Notes
