Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar for 3-5 minutes until light and fluffy.
Beat in eggs one at a time, then add vanilla extract and mix until well blended.
Dissolve instant coffee granules in hot water, allow to cool slightly, then mix into the butter mixture.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually add dry mixture to wet ingredients, mixing until just combined.
Fold in chocolate chips or nuts if desired.
Drop rounded portions of dough onto prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes until edges are lightly golden and centers remain soft.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
