  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar for 3-5 minutes until light and fluffy.
  • Beat in eggs one at a time, then add vanilla extract and mix until well blended.
  • Dissolve instant coffee granules in hot water, allow to cool slightly, then mix into the butter mixture.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry mixture to wet ingredients, mixing until just combined.
  • Fold in chocolate chips or nuts if desired.
  • Drop rounded portions of dough onto prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until edges are lightly golden and centers remain soft.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
