Instructions

Step-by-Step Instructions

  • Cut the chicken breasts in half lengthwise to create four thin cutlets. Season with salt and pepper, and dredge in flour.
  • Heat olive oil in a large skillet over medium-high heat. Cook the chicken cutlets for 4-5 minutes on each side until golden brown. Remove and keep warm.
  • Melt butter in the same skillet, add mushrooms and Italian seasoning. Sauté for about 5-7 minutes until tender and golden. Remove from skillet.
  • Add minced garlic to the skillet and sauté for about 30 seconds. Pour in chicken broth, lemon juice, and Dijon mustard, stir and simmer for 3-4 minutes.
  • Return the chicken and mushrooms to the skillet, stir in the heavy cream and cook for an additional 5 minutes until heated through and the sauce thickens.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze without the sauce for up to 2 months.
