Preparation Steps
Preheat the oven to 350°F (175°C) and line the bottom of a 7-inch springform pan with parchment paper.
Crush 24 Oreo cookies in a food processor until they resemble fine crumbs and mix with ½ cup melted butter.
Press the mixture into the bottom and sides of the springform pan, bake for 8-10 minutes.
In a mixer, beat together cream cheese, sugar, eggs, sour cream, vanilla extract, and salt until smooth.
Gently fold in chopped Oreos to the cheesecake batter.
Pour cheesecake batter into the cooled crust and bake in a water bath at 325°F (160°C) for 75 minutes.
Cool the cheesecake gradually in the oven with the door cracked open for 1 hour.
Chill the cheesecake in the refrigerator for at least 4 hours.
Melt chocolate chips with heavy cream and pour over cooled cheesecake.
Garnish with whipped cream and halved Oreos if desired.
Notes
