Ingredients

Instructions
Begin by blending the eggs, cottage cheese, salt, and black pepper in a blender until smooth.
Prepare silicone muffin cups and evenly distribute the cheese, baby spinach, minced onion, and bacon among the cups.
Fill each cup with the egg mixture, about three-quarters full, and gently stir.
Preheat the air fryer to 290°F and cook the egg bites for 12-15 minutes until puffed and set.
Remove the cups from the air fryer and let cool for a couple of minutes before serving.
Notes
Use silicone molds for easy removal.
Don’t overblend to keep the texture.
Monitor cooking time closely.
Experiment with different add-ins.
Store leftovers in an airtight container for up to 5 days.
