Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup feta cheese or cheddar
  • 1 cup baby spinach
  • ¼ cup onion minced
  • optional bacon

Instructions

  • Begin by blending the eggs, cottage cheese, salt, and black pepper in a blender until smooth.
  • Prepare silicone muffin cups and evenly distribute the cheese, baby spinach, minced onion, and bacon among the cups.
  • Fill each cup with the egg mixture, about three-quarters full, and gently stir.
  • Preheat the air fryer to 290°F and cook the egg bites for 12-15 minutes until puffed and set.
  • Remove the cups from the air fryer and let cool for a couple of minutes before serving.

Notes

  • Use silicone molds for easy removal.
  • Don’t overblend to keep the texture.
  • Monitor cooking time closely.
