Instructions
Prepare the Dish
In a food processor, blend lime juice, sour cream, mayonnaise, garlic salt, chopped chipotle pepper, and chopped cilantro until smooth. Refrigerate.
In a bowl, mix garlic powder, paprika, onion powder, cayenne pepper, thyme, basil, oregano, salt, and black pepper together until well combined.
Coat fish in melted butter then sprinkle with the blackening seasoning on both sides.
Heat olive oil in a skillet, add the seasoned fish, cook for about 2 minutes per side until blackened, then transfer to a paper towel-lined plate.
Warm tortillas and assemble tacos by filling with cabbage, fish, cilantro, Cotija cheese, and top with taco sauce. Serve with lime wedges.
Notes
For best results, serve immediately after assembling. Adjust the spice level to your preference by modifying the cayenne pepper.
