Ingredients

For the Tacos

  • 1 medium head Cauliflower cut into bite-sized florets
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • 8 small Tortillas

For the Cilantro Lime Crema

  • 1 cup Fresh cilantro
  • ½ cup Cashews or substitute with sunflower seeds or silken tofu for a nut-free option
  • 1 Lime juice from 1 lime
  • 1-2 tablespoons Water as needed to thin the crema

Instructions

Preparation

  • Preheat your oven to 425°F (220°C). Gather your ingredients.
  • Cut the cauliflower into bite-sized florets and spread evenly on a baking sheet.
  • Drizzle olive oil over cauliflower and season with chili powder, cumin, garlic powder, and salt. Toss to coat evenly.
  • Roast the seasoned cauliflower for 25-30 minutes, stirring halfway for even cooking.
  • While the cauliflower roasts, blend cilantro, cashews, lime juice, and water until creamy. Adjust water for desired consistency.
  • Warm tortillas in a skillet for about 1-2 minutes per side or microwave for 15-20 seconds.
  • Assemble tacos by piling roasted cauliflower in each tortilla and drizzling with Cilantro Lime Crema.
  • Add optional toppings like shredded cabbage, sliced radishes, or diced tomatoes.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze roasted cauliflower separately for up to 2 months.
