Preparation
Preheat your oven to 425°F (220°C). Gather your ingredients.
Cut the cauliflower into bite-sized florets and spread evenly on a baking sheet.
Drizzle olive oil over cauliflower and season with chili powder, cumin, garlic powder, and salt. Toss to coat evenly.
Roast the seasoned cauliflower for 25-30 minutes, stirring halfway for even cooking.
While the cauliflower roasts, blend cilantro, cashews, lime juice, and water until creamy. Adjust water for desired consistency.
Warm tortillas in a skillet for about 1-2 minutes per side or microwave for 15-20 seconds.
Assemble tacos by piling roasted cauliflower in each tortilla and drizzling with Cilantro Lime Crema.
Add optional toppings like shredded cabbage, sliced radishes, or diced tomatoes.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freeze roasted cauliflower separately for up to 2 months.
