  • 8 large flour tortillas
  • 2 cups cooked shrimp peeled and deveined
  • 1 cup Alfredo sauce store-bought or homemade
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese plus additional for topping
  • ½ cup grated Parmesan cheese
  • 1 cup frozen spinach thawed and drained
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 2 tablespoons olive oil for sautéing
  • fresh parsley chopped, for garnish

Instructions

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  • Add cooked shrimp to the skillet with the garlic. Stir and cook for 2-3 minutes until heated through.
  • In a large bowl, combine the shrimp mixture, ricotta cheese, half of the shredded mozzarella, Parmesan cheese, spinach, and Italian seasoning. Mix well and season with salt and pepper.
  • Lay a tortilla flat and spoon a generous amount of filling into the center. Roll it up tightly. Repeat with remaining tortillas and filling.
  • Pour a thin layer of Alfredo sauce into the bottom of a baking dish. Arrange the rolled tortillas seam-side down in the dish.
  • Pour the remaining Alfredo sauce evenly over the roll-ups. Sprinkle the remaining mozzarella cheese on top.
  • Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let cool for a few minutes, then garnish with chopped parsley before serving.
