In a large bowl, combine cherry pie filling, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well blended.
In another bowl, whisk together flour, rolled oats, brown sugar, cinnamon, and salt.
Add cold cubed butter to the dry ingredients and work it into a coarse, crumbly texture.
Pour the cherry filling into the baking dish and sprinkle the topping evenly over it.
Bake in the preheated oven for 50-60 minutes until golden brown.
Allow the crumble to cool for a few minutes before serving. Enjoy it warm or cold.
