Ingredients

For the Stuffing

  • 8 oz cream cheese softened
  • ½ cup pecans finely chopped
  • ½ cup dried cranberries chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 pinch cinnamon optional

For the Dates

  • 20 Medjool dates pitted
  • 1 pinch sea salt

For Garnish

  • 1 tablespoon fresh parsley optional

Directions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine cream cheese, pecans, cranberries, honey, vanilla extract, and a pinch of cinnamon. Mix until well blended.
  • Make a slit along one side of each Medjool date to create a pocket.
  • Stuff each slit date with the creamy filling.
  • Line a baking sheet with parchment paper and arrange the stuffed dates on top. Sprinkle lightly with sea salt.
  • Bake the stuffed dates for about 10-15 minutes.
  • Allow the stuffed dates to cool on the baking sheet for about 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

Avoid overstuffing the dates to prevent bursting during baking. Serve warm or at room temperature, and store leftovers in an airtight container for up to 3 days.
