  • 10 ounces Penne pasta
  • 2 cups Broccoli florets

  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Flour
  • 1 cup Vegetable broth
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • Salt to taste
  • Pepper a dash
  • Crushed red pepper flakes a pinch, optional

Instructions

Step-by-Step Instructions for Creamy Broccoli Pasta

  • Bring a large pot of salted water to a vigorous boil. Add penne pasta and cook until al dente, about 8-10 minutes. During the last 2 minutes, add broccoli florets. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Sprinkle flour over the sautéed garlic and whisk continuously for about 1 minute to create a roux.
  • Slowly pour in vegetable broth and heavy cream, stirring constantly. Bring to a gentle simmer and cook for 4-5 minutes until thickened.
  • Remove from heat and stir in grated Parmesan cheese until smooth. Season with salt, pepper, and crushed red pepper flakes.
  • Add cooked pasta and broccoli to the sauce, tossing gently until evenly coated.
  • Stir in fresh lemon juice and chopped basil until combined.
  • Transfer to a serving dish and garnish with extra Parmesan cheese and basil if desired. Serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat with a splash of cream for best results.
