  • 4 pieces boneless, skinless chicken breasts
  • ¼ cup olive oil for marinade and searing

For the Marinade

  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • ½ cup crumbled feta cheese
  • ¼ cup sliced Kalamata olives

Instructions

Step-by-Step Instructions

  • In a large bowl, whisk together olive oil, fresh lemon juice, dried oregano, garlic powder, onion powder, salt and pepper to taste.
  • Add chicken breasts to the marinade, turning to coat evenly, cover, and refrigerate for at least 30 minutes.
  • Preheat oven to 400°F (200°C) and let marinated chicken sit at room temperature for 10 minutes.
  • In a skillet, pour olive oil and heat over medium-high. Sear the chicken for 3–4 minutes on each side until golden-brown.
  • Remove from heat and sprinkle feta cheese and Kalamata olives over the chicken.
  • Transfer the skillet to the oven and bake for 20–25 minutes until the chicken reaches 165°F.
  • Let chicken rest, garnish with parsley, and serve with lemon wedges.

Notes

Marinate chicken for longer for deeper flavor. Use fresh ingredients whenever possible for the best taste.
