Instructions
Step-by-Step Instructions
In a large bowl, whisk together olive oil, fresh lemon juice, dried oregano, garlic powder, onion powder, salt and pepper to taste.
Add chicken breasts to the marinade, turning to coat evenly, cover, and refrigerate for at least 30 minutes.
Preheat oven to 400°F (200°C) and let marinated chicken sit at room temperature for 10 minutes.
In a skillet, pour olive oil and heat over medium-high. Sear the chicken for 3–4 minutes on each side until golden-brown.
Remove from heat and sprinkle feta cheese and Kalamata olives over the chicken.
Transfer the skillet to the oven and bake for 20–25 minutes until the chicken reaches 165°F.
Let chicken rest, garnish with parsley, and serve with lemon wedges.
Notes
Marinate chicken for longer for deeper flavor. Use fresh ingredients whenever possible for the best taste.
