Ingredients

For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling

  • 16 oz cream cheese, softened
  • 0.5 cups granulated sugar additional
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 tablespoon green food coloring
  • 0.5 cups mini chocolate chips

For Decoration

  • 1 cup red candy hearts optional

Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and prepare your muffin tin with liners or spray.
  • Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl.
  • Press about 1 tablespoon of the mixture into the bottom of each muffin cup.
  • Beat softened cream cheese until smooth using an electric mixer.
  • Add in additional sugar gradually and mix until well combined.
  • Incorporate vanilla extract and mix until just combined.
  • Add eggs one at a time, mixing on low speed after each addition.
  • Stir in sour cream and green food coloring until smooth.
  • Fold in mini chocolate chips gently.
  • Pour the batter over the crusts in the muffin tin till about ¾ full.
  • Bake for 18-20 minutes until edges are set with a slight jiggle in the center.
  • Cool in the pan for 15 minutes, then refrigerate for at least 2 hours.
  • Decorate with red candy hearts if desired.
  • Serve chilled and enjoy your Grinch Mini Cheesecakes.
