Instructions
Preparation
Preheat your oven to 325°F (163°C) and prepare your muffin tin with liners or spray.
Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl.
Press about 1 tablespoon of the mixture into the bottom of each muffin cup.
Beat softened cream cheese until smooth using an electric mixer.
Add in additional sugar gradually and mix until well combined.
Incorporate vanilla extract and mix until just combined.
Add eggs one at a time, mixing on low speed after each addition.
Stir in sour cream and green food coloring until smooth.
Fold in mini chocolate chips gently.
Pour the batter over the crusts in the muffin tin till about ¾ full.
Bake for 18-20 minutes until edges are set with a slight jiggle in the center.
Cool in the pan for 15 minutes, then refrigerate for at least 2 hours.
Decorate with red candy hearts if desired.
Serve chilled and enjoy your Grinch Mini Cheesecakes.
