  • Add chopped green onion and carrots to the egg mixture and whisk gently.
  • Heat the pan over low heat and coat it with oil.
  • Pour in the first third of the egg mixture and start to roll as it cooks.
  • Push the rolled omelette to the side, add more egg mixture, and continue rolling.
  • Repeat the rolling process with the last third of the mixture.
  • Cook until fully set and slightly golden, then slide out and rest.
  • Slice the omelette into 6 to 8 pieces and serve warm.
