Instructions

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large pot, bring salted water to a boil and add the cubed sweet potatoes; cook for 10-15 minutes until tender. Drain and set aside.
  • Heat a large skillet over medium heat and add olive oil; sauté onion for 3-4 minutes until translucent.
  • Stir in minced garlic and diced bell pepper; cook for an additional 2-3 minutes until softened.
  • Push vegetables aside and add ground turkey; cook for 5-7 minutes until browned and cooked through.
  • Sprinkle in paprika, cumin, chili powder, salt, and pepper; mix until well-coated and cook for another minute.
  • Add black beans, diced tomatoes, and corn; stir and let simmer for about 5 minutes.
  • Layer sweet potatoes in a baking dish; pour the turkey and vegetable mixture over the top.
  • Optionally, sprinkle with shredded cheddar cheese.
  • Cover with aluminum foil and bake for 25 minutes, then remove foil and bake for another 10-15 minutes until bubbly.
  • Garnish with fresh cilantro before serving.
