Step‑by‑Step Instructions for Okonomiyaki

  • In a large mixing bowl, combine 2 cups of all-purpose flour with 1 cup of dashi or vegetable stock. Whisk them together until the mixture is smooth and free of lumps, about 2-3 minutes.
  • Crack an egg into the batter and add 2 cups of shredded cabbage, ½ cup of chopped green onions, and any optional ingredients like cooked meat or seafood. Stir the mixture well for about 1-2 minutes until everything is evenly distributed.
  • Place a non-stick skillet or griddle over medium heat for about 5 minutes. Lightly grease the surface with oil, spreading it evenly with a spatula.
  • Using a measuring cup, pour about 1 cup of the Okonomiyaki batter onto the heated skillet, forming a round pancake shape. Cook for approximately 5 minutes, or until the bottom is beautifully golden brown.
  • Carefully slide a spatula underneath the pancake and flip it over. Cook the other side for another 5 minutes until it turns golden brown and is cooked through.
  • Once cooked, remove the pancake from the skillet and place it on a serving plate. Drizzle generously with okonomiyaki sauce and mayonnaise, then sprinkle aonori and katsuobushi on top.
