Ingredients

Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts great for grilling
  • ¼ cup honey adds sweetness

Rice

  • 1 cup jasmine rice provides a beautiful base

Avocado Mixture

  • 1 piece avocado diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 tablespoon olive oil to blend flavors

Instructions

Preparation

  • In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, and salt and pepper. Whisk together until the honey dissolves.
  • Place the chicken in a resealable bag or dish, pour the marinade over it, and refrigerate for at least 30 minutes.
  • Rinse jasmine rice under cold water, then simmer in chicken broth for about 15 minutes until tender.
  • Preheat a grill or grill pan over medium-high heat.
  • Grill chicken for approximately 6-7 minutes per side, reaching an internal temperature of 165°F (75°C).
  • In a separate bowl, combine diced avocado, chopped red onion, cilantro, and olive oil. Toss gently.
  • Assemble by layering rice, grilled chicken, and avocado mixture on a plate.
  • Serve with lime wedges on the side.

Notes

Use fresh lime juice and zest for the best flavor. Customize the stack with extras like corn or black beans.
