Begin by boiling 1 cup of water in a small saucepan. Add the strawberry Jell-O powder and stir until dissolved. Remove from heat and add 1 tablespoon of water for smoother consistency. Pour into a mold and refrigerate for at least 2-3 hours.
Once set, remove the Jell-O from the mold and cut into small, uniform cubes about one inch in size.
In a clear glass or parfait dish, start layering the Jell-O cubes at the bottom, followed by a layer of yogurt and then granola.
Repeat the layering process until the dish is filled, ending with a yogurt layer on top.
Cover with plastic wrap and chill for at least 4 hours to meld flavors.
Sprinkle additional granola on top just before serving for extra crunch.
Notes
Allow the Jell-O to set properly for the best layering. Store any leftovers in airtight containers in the fridge for up to 3 days.
