For the Stew

  • 2 tablespoons olive oil
  • 1 pound lamb shoulder
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 2 cups broth vegetable or lamb
  • 1 tablespoon honey
  • 1 can diced tomatoes
  • 2 cups chickpeas
  • 2 cups spinach fresh or frozen
  • to taste salt for seasoning

Instructions

Cooking Steps

  • Heat the oil in a large pot over medium heat.
  • Brown the lamb shoulder pieces until beautifully browned on all sides for about 5–7 minutes.
  • Sauté the chopped onion and minced garlic until the onion is translucent, about 3-4 minutes.
  • Add sliced carrots and diced potatoes, and cook for another 3 minutes.
  • Sprinkle in all spices and mix well to coat.
  • Combine broth, honey, diced tomatoes, and chickpeas; bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  • Add spinach 10 minutes before serving, stir gently, and season with salt to taste.

Notes

For best results, use high-quality lamb and ensure all spices are well mixed. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
