Instructions
Step-by-Step Instructions for Pear and Almond Cake
Preheat the oven to 350°F (175°C) with a rack positioned in the center. Line a 9" round cake pan with parchment and butter the parchment and sides.
In a medium-sized mixing bowl, sift together almond flour, all-purpose flour, baking powder, and salt. Set aside.
Beat the softened butter and granulated sugar together on medium speed for about 2 minutes until creamy.
Add the eggs one at a time, beating well after each addition. Mix in almond and vanilla extracts.
Gradually add the flour mixture to the batter, mixing on low speed until just incorporated.
Pour the batter into the prepared cake pan, spreading it evenly.
In a small bowl, toss chopped pears with lemon juice and salt. Distribute pears evenly over the batter.
Sprinkle the top with additional granulated sugar. Bake for 40 to 45 minutes until golden and toothpick comes out clean.
Let the cake cool in the pan for about 20 minutes, then transfer to a wire rack to cool completely.
