  • 4 oz Cream cheese softened
  • 3 tablespoon Plain Greek yogurt full-fat preferred
  • 2 tablespoon Extra-virgin olive oil for smoothness
  • 1 tablespoon Fresh lemon juice to brighten flavors
  • 1 teaspoon Lemon zest finely grated
  • 1 clove Garlic very finely minced
  • 1-2 teaspoon Honey for sweetness
  • ¼ teaspoon Ground cumin optional

  • Black pepper freshly ground

  • cup Shelled pistachios roughly chopped

Step-by-Step Instructions

  • Start by placing the well-drained feta cheese into a mixing bowl and crumble it thoroughly with a fork.
  • In a medium bowl or food processor, combine the crumbled feta, softened cream cheese, and Greek yogurt. Let sit for 5-10 minutes to reach room temperature.
  • Pour in the extra-virgin olive oil, fresh lemon juice, lemon zest, and minced garlic. Stir in honey and optional ground cumin, and season with black pepper and salt.
  • Blend the mixture until creamy using a whisk or fork, leaving some texture from the feta.
  • Adjust the consistency by adding Greek yogurt or a splash of water/milk if too thick, or refrigerate for firmness if too thin.
  • Transfer the dip to a serving bowl and smooth out the surface. Cover and chill for at least 30-45 minutes.
  • While the dip chills, prepare the toppings by removing the pomegranate arils and chopping the pistachios and mint.
  • Before serving, take the dip out of the fridge and swirl to refresh texture. Top with pomegranate arils and chopped pistachios.
  • Drizzle honey and extra-virgin olive oil over the top, and add a pinch of flaky sea salt and black pepper if desired.
  • Serve the dip with toasted pita, pita chips, and fresh veggie sticks.

Notes

Allow dip to chill for at least 30-45 minutes for best flavor. Adjust seasoning according to feta's saltiness.
