Ingredients

For the Filling

  • 2 cups shredded chicken breast
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

For the Seasoning

  • ¼ cup chopped fresh cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Assembly

  • 8 pieces low carb tortillas
  • 2 cups low carb enchilada sauce
  • 1 tablespoon olive oil for greasing the baking dish

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with olive oil. Set aside.
  • In a large bowl, combine shredded chicken, cottage cheese, shredded cheddar cheese, Monterey Jack cheese, cilantro, chili powder, cumin, garlic powder, salt, and black pepper. Mix thoroughly.
  • Spread half of the enchilada sauce evenly across the bottom of the baking dish.
  • Take one tortilla and spoon about ⅓ cup of the filling mixture along the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat for the remaining tortillas.
  • Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well coated. Sprinkle any leftover cheese on top.
  • Bake for 20 minutes until the sauce is bubbling and the cheese is golden.
  • Let the enchiladas cool for 5 minutes before serving.
